Hi, I'm Adrienne Limqueco
My relationship with food began in my family’s kitchen, standing beside my mom, a proud Louisiana Creole woman, learning that food is more than something we eat. It is how we connect, celebrate, care for one another, and preserve our stories. My husband’s Filipino culture has deepened that appreciation and helped shape my interest in the ways culture, history, and lived experience influence our relationships with food and health.
My path to dietetics has not been a straight one. I originally entered college intending to become a registered dietitian, but my curiosity led me to Food Science and Technology and eventually into a food laboratory testing products for safety. I loved the science, but I realized I missed something important: working with people.
So I found my way back to nutrition.
As a nontraditional student, getting here required starting over, learning from setbacks, and becoming comfortable with taking the long way around. That experience has shaped one of my strongest beliefs about health: meaningful change does not have to happen quickly to matter.
That belief is at the heart of Rooted in Nutrition.
I’m interested not only in what nutrition science tells us, but also in how we came to know what we know. Nutrition science has a history, research has limitations, and not every community, culture, or food tradition has been equally represented.
I believe nutrition care should consider the whole person: their biology, culture, experiences, circumstances, preferences, and relationship with food.
That means no one-size-fits-all plans and no promises of 20-day transformations.
